Sweet and Savory Peanut Butter Bacon Burgers

Warning: what you’re about to see might frighten you, but I encourage you to continue reading. Because, despite what common sense might be telling you, these are good. Really good.

Growing up, whenever we’d have BLTs for dinner, I used to have a piece of toast slathered with peanut butter and topped with bacon (granted, it was always turkey bacon in my mom’s house). I know it sounds a little weird, but it’s the ultimate if you’re a fan of sweet and salty like I am. It dawned on me that this would be equally good — if not better — on a burger. So, that’s what I did. And it did not disappoint.

Sweet and Savory Peanut Butter Bacon Burgers (serves 4)

What you need:

(for the burgers)

  • 1.5 pounds ground sirloin
  • 1 teaspoon (about 6 sprigs) fresh thyme, chopped
  • 1 small shallot, very finely minced
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon smoked paprika
  • 2 tablespoons grill seasoning

(for serving)

  • 4 hamburger buns, toasted
  • 4 tablespoons of peanut butter
  • 4 slices of thick-cut bacon, cooked until crispy

How you do it:

  1. In a large bowl, gently combine all the the burger ingredients (sirloin through grill seasoning) until well mixed. Form into 4 equally-sized patties that are about an inch or so in thickness.
  2. On a preheated grill (I used charcoal), cook burgers for approximately 3-4 minutes per side, or until cooked to your desired doneness. (4 minutes per side should get you about medium depending on how hot your grill is.) Remove burgers from the grill and let them rest for a few minutes so the juices redistribute.
  3. To assemble, top each burger with a tablespoon of peanut butter and a slice of bacon (that’s been halved and laid on the top of the burger like an X) and sandwich it between the toasty buns.

    The whole bacon and pb thing does not sound weird to me at all, because when I was growing up, we would regularly have grilled peanut butter and bacon sandwiches! They were delicious. Never would have thought to top a burger that way, but why not?

    This is totally out there, but I could see it being utterly amazing. Wonder what it’d be like with chunky PB to add another level of crunch along with the bacon…Yummm.

    Burger Satay? What a cool idea… I can think of lots of Indian and Thai sauces with peanuts in them that could work well as a BBQ sauce of sorts… hmmm… maybe even on a rib? Thanks for the great idea!

    I can definetly see how that would taste good – for sure the peanut butter and bacon, and the bacon and burger is a lot like satay. Very creative – looks great!

    Very interesting!! Sounds like a great salty and savory combo! Speaking of weird peanut butter combos and although different, my sister loves peanut butter and pickle sandwiches. I haven’t been brave enough to try them!

    You are such a pioneer in the peanut butter burger frontier! I do love sweet and salty and since I grew up putting potato chips on my peanut butter sandwich, I understand where you are coming from. I need to try this!

    you and my bf think alike :) he convinced me to try this combo sans bun a couple weeks ago.. it was good! a little odd at first but hard to not enjoy…meat, good, bacon, good, peanut butter…gooooood!
